This is the most beautiful tea!

First it steeps into the prettiest royal blue color,

then when a few drops of lemon or lime juice are added, it turns deep purple!

Simply amazing!

Caffeine free, has slightly sweet, flowery taste with a hint of a taste of fresh green peas. Very soothing.

Steeping Instructions:

HOT TEA: Use 1 teaspoons per mug (12/14oz), steep about 5-6 min in hot water 212 degrees.

ICED TEA: Same as above, use only half amount of water for steeping. Pour over ice filled tumbler.

INFORMATION:
Introducing a flower guaranteed to give you the blues. (Thankfully, it‟s not the blues normally associated with dingy bars and failed relationships.) Rather, it‟s quite the opposite.

The petals of the Blue Pea Flower, (Latin: Clitoria ternatea), have been used since time immemorial to add colour to celebratory drinks in various locales around the world.

Exhibit 1: Thailand, the country where we've sourced this luxury grade dried Blue Pea Flower. For centuries, the Thai people have had a love affair with a syrupy beverage known as nam dok anchan. This fabulous beverage made with dried flowers, lime juice and sugar is as delicious as it is easy to prepare. Here's how you make it. You'll need:
* 12 dried flowers
* Lime juice, (Lemon juice or lemon aid will also change the color.)
* Sugar
Start by soaking the flowers in 1 cup of freshly boiled water per serving. Let them steep for 15 minutes, then strain. Notice the deep blue hue of the water. Next, add a few drops of lime juice for sweetness and watch your glass turn purple, or add lemon aid, or add an Arnold Palmer and have a Purple Arnold Palmer. Pour over ice, serve with a slice of lime and get ready to say 'mmm'.

What does Ayurveda say about the Blue Pea Flower?
According to India's traditional medicine, Blue Pea Flower has been in use for centuries as an antidepressant, anticonvulsant, sedative and memory enhancer. Amazing. 

HOT TEA BREWING METHOD:
Bring filtered or freshly drawn cold water to a rolling boil. Place 1 teaspoon, for each 7-9oz/200-260ml of fluid volume in the teapot. Pour the boiling water into the teapot. Cover and let steep for 5-10 minutes according to taste (the longer the steeping time, the better the flavor as more fruit or herb flavor is extracted). Garnish and sweeten to taste. 

ICED TEA BREWING METHOD (Pitcher):(to make 1 liter/quart): Place 6 slightly heaping teaspoons, into a teapot or heat resistant pitcher. Using filtered or freshly drawn cold water, boil and pour 1¼ cups/315ml into the pot. Steep for 5 minutes. Quarter fill a serving pitcher with cold water. Pour the tea into your serving pitcher straining the leaves. Add ice and top-up the pitcher with cold water. Garnish and sweeten to taste. A rule of thumb when preparing fresh brewed iced tea is to increase the strength of hot tea since it will be poured over ice and diluted with cold water. (Note: Some luxury quality teas may turn cloudy when poured over ice. This is a sign of luxury quality and nothing to worry about.) 

ICED TEA BREWING METHOD (Individual Serving):Place 1 slightly heaping teaspoon, into a teapot for each serving required. Using filtered or freshly drawn cold water, boil and pour 6-7oz/170-200ml per serving into the pot. Cover and let steep for 5 minutes. Add hot tea to a 12oz/375ml acrylic glass filled with ice, straining the leaves. Not all of the tea will fit, allowing for approximately an additional ½ serving. Sweeten and/or add lemon to taste. A rule of thumb when preparing fresh brewed iced tea is to increase the strength of hot tea since it will be poured over ice and diluted. (Note: Some luxury quality teas may turn cloudy when poured over ice. This is a sign of luxury quality and nothing to worry about!) 

RECOMMENDATION:
We recommend the use of our 1 Cup of Perfect Tea measuring spoon for best results. 

FOOD SAFETY ADVISORY:
We strongly recommend using filtered or freshly drawn cold water brought to a rolling boil when brewing all types of tea. Today's water has been known to carry viruses, parasites, and bacteria. Boiling the water will kill these elements and reduce the potential incidence of water-borne illnesses.
